Truck Loading Order Of Operations.
1.Ovens (If no ovens present load tables first)
The oven is placed and secured with a strap on the right side of the truck. If there are two ovens, secure them side by side.
2.Plates and Silverware
The plates and silverware are to be secured underneath the oven/s.
3.Tables
If there is only one oven, tables are stacked to the left, largest on the bottom to smallest on top, if there are two ovens, tables are stacked in front of the oven on the left.
4.Black And Yellow Equipment bins
The black and yellow bins are stacked on top of tables. Do not stack more than three high.
5.Glasses
The glass racks are placed in front of the oven; do not stack more than seven at a time.
6.Trash cans
Stack from biggest to smallest. Floor paper and table legs can be placed inside the stack.
7.Bar
liquor crates first, perishable beverage garnish last
8.Cambros & Dirty Kitchen Equipment
Cambro’s will be labeled either: “Return food” or Dirty
Stack Cambro’s no more than 2.5 high
9.Trash
Most of the time, trash is left behind. Please make sure all tipsters are closed. If there is not enough room for all trash in the tipsters, please take the balance to be disposed of at the kitchen
If we are responsible for taking garbage, a red tipster should be on the truck. This should be packed last.
